WHITE CHILI     
a kind of soup

Famed Bev Hills Caterer Milt Wiliams used to wow people with his WHITE CHILE.

ON HAND: 6 corn tortillas
2 tblsps olive oil
l lb chicken, simmered half hour in water, spices, cooled then boned.
2 small red bell peppers, seeded, diced
l lg onion, choped
1 4 ounce can chopped green chiles drained or make your own,
   by burning green chiles, bagging, peeling.
3 cloves garlic
l tbsp chili powder
l tsp ground cumin
l tsp dried oregano
2 cans of CANNELONI white beans.
l 14 oz can reduced sod. chicken broth.
2 cups fat free or low-fat milk
2 - 15 oz cans white hominy, drained, rinsed.

GARNISH: cilantro, limes.

MODE: Salt, pepper the chicken, saute in half the oil, add more oil and vegies, spices. Saute a moment then add liquid, broth, milk, hominy and beans. Heat thoroughly. Let simmer for a few minutes to make certain it's hot. Garnish with six corn tortillas that were heated over gas flame until spots appear, Scissor cutting them into slices. Garnish with 1/2 cup chopped fresh cilantro, lime wedges and a dusting of dried oregano that was roasted or heated on a thick skillet until fragrant. PS it's really kind of a pale PINK.
