CAESAR SALAD is the most popular flavor at Ken's Dressings' -- their MOST
SOLD flavor. Caesar Dressing was invented at the movie stars' favorite Caesar's Hotel
back in the the 40's  when film stars drove to Tijuana for the bullfights and
duty-free French perfumes. (You can do this today if you have a passport. What a fun
day that is! 2hrs south of L.A. ) So you want to try making this incredible recipe for a tenth

Most Caesar dressings today are an accurate knock-off of the authentic
one. BUT they don't always use 'top' ingredients. Typically THE GREAT
Caesar would use oilve oil, Italian, grated parmesano, garlic,
anchovies/ Worcestershire sauce, vinegar or lemon juice, and egg yolks,
(or you sub mayonnaise---1 tablespoon mayo =   1 egg). If U want egg
yolk, Lower it in spoon in a pan of boiling water for l second or two to
Pasteurize it for salmonella avoidance.  And fry up your own croutons.
Any stale white bread in the house and rub them with garlic once fried.

VARIATION: BUTTERMILK adds a 'ranch' flavor to Caesars. And mince
three kinds of onions, a great restaurant cook "TINA" told me.
I wondered if it was yellow, white or red onions or green
(scallions) and what would another possibility be? Shallot? Dried onion
