FIRST PRIZE EGG SALAD

l0 hard cooked eggs, chopped if you want animal product. Bring water to a boil, simmer thirty seconds, then turn off, cover and let sit five minutes so no sulphur develops in yolks -- Or a pound box of TOFU, firm or medium if you're vegan. No sulphur in THAT!

3 ribs celery dice washed, mince
1/2 onion minced
4 scallions w 2” of greens left on, thinly sliced
2 tsps finely minced jalapeno pepper
l tsp finely minced garlic
½ cup finely diced red bell pepper
l cup coarsely grated cheddar cheese
l cup mayo (you can make your own easy)
l tbsp fresh lime juice
2 teaspons ground cumin
1 tsps freshly ground black pepper
l tbsp chopped flat leaf parsley black pitted olives for garnish.
optional toasted chile sesame oil or plain sesame oil and most important, toasted sesame seeds.
Add to the tofu or the eggs. Your call. PAPRIKA on top as garnish

JOIN INGREDIENTS IN A BOWL, stirring. Serve on a plate in a bed of lettuce.

HOME WHIPPED FRESH MAYONNAISE

3 egg yolks, 2 tablespoons lemon juice 1 teaspoon honey 1 teaspoon dry
mustard 1/2 teaspoon salt pinch ground black pepper 1 cup olive oil.

STIR ALL  INGREDIENTS except OIL together doing so with the steel whip, then someone else pours oil in slowly steadily a teaspoon a  second but in a steady flow while you use a whip to make an emulsion. Fridge til ready to use.
