THE SILENCE OF THE LAMBS. A SIMPLE PLEA


Dear Human. I know my meat is sweet but can't you eat pig meat instead? It's really cheap right now. PORK LOIN CHOPS are 99c.lb compared to 5$ sale price for lamb chops. When you eat babies like me, little ones who  are separated from their mothers, the meat is saturated with sorrow and the day  after, you will be massively depressed and  not have a clue why. Veal. Lamb!!!! TOO FULL OF DEPRESSION!

Spring lamb's on sale up and down the street.
and their mothers now sorrow, weep & bleat.
Lambs are so tiny they have to be led;
can't you eat a big fat piggie instead?

NO, SWEETIE, we are going to give the readers some superb recipes for pork. Cheaper full of vitamins and no depression in it!

LOMO DE PUERCO EN SALSA VERDE (5 minute version)
The meat takes five minutes, the rice takes twenty. So when the rice has been cooking for 15 minutes, start on your meat and salsa verde. While your pot of rice finishes steaming, throw some green, husked tomatillos, about 10 mediums, and two or three jalapenos (gutted,) into a cup of water, bring to a boil, simmer 2 minutes. Chop some fresh cilantro and drop it in at the end, turn fire off. Discard most of the water into a teacup. Mash tomatillos, jalapenos with any masher. Drizzle oil in your sauce pan, take your favorite cut pork, 1 1/2 lbs pork loin, chops, defatted as much as possible, maybe cubed, 1 onion, chopped 4 cloves garlic, minced and fry lightly, turning meat. When you think it's partially cooked, Throw the wet green tomatillo mash over them. add1 tsp each: oregano and cumin, both rubbed, salt and pepper to taste. Reduce heat to medium; cover pot and simmer a few minutes until you're sure pork is no longer pink. I serve the pork and sauce alongside Mexican rice made with fresh tomatoes in summer or white basmati rice is fine.  Heaven on a plate!

ALSATIAN PORK -  Takes five minutes so start it when rice is half cooked. It's pork in colorful, fruity sauce, with some liquer in it.  Pork goes with sweet fruits more than any other meat. This recipe was the result of an attempt to use regional liqueurs in traditional, regional ways.  This PORK recipe was intended for PRUNELLA DOLFI from Alsace Lorraine a partial bottle of which I inherited when novelist Gwen Davis, recently widowed and leaving her mansion in Beverly Hills, had a garage sale where I read palms for the guests. Last day of the sale I worked all day. Gwen told me to take anything I wanted that hadn't sold. The 4 kids and I were dirt poor at the time and let me tell you, it was like being given a credit card at Sloan's or Neiman Marcus. She gave me all her plants, baskets, and encouraged me to clean out her liquor closet. I don't drink but the prunella attracted my eye. She also gave me all the furniture and art she didn't sell at the sale so I've been reading palms at her parties and garage sales ever since. She always forgets how much she's given me and presses checks into my hand when I tell her I'll work for free. Along with great writing talent, the woman has too much class along with too much amnesia. She went on to be the food/hotel columnist for Wall St. Journal, paid to travel full time, eat her way around the world. So you better believe GOOD KARMA brings worldly payoffs. And Jamie Lee Curtis bought  her novel, KINGDOM COME, about passions that last up into heaven. But they never made the film. (sigh) Great book. Get it at ABE BOOKS.

METHOD: Litely saute cut up pork in clarified butter mixed with oil.  As it sautes, add garlic, onion, peeled yams, parsley, green tart apples, raisins, orange rind, orange and lemon juice and prunella dolfi (or any fruity liqueur,) and a few tsps. honey. When sauted, at last moment, add pomegranate seeds, passionflower pulp or green fresh grapes, only cooking long enuf to kill enzymes in these, while still seeming raw. Serve over rice.
