SO BUY TWO of them splurging 8 BUCKS for your FIESTA. Guaranteed, you can get 60 Nuggets if you have a sharp boning knife. INVITE IN THE NEIGHBORHOOD! Make a salad, Everyone brings their own white wine. A BIG LEMON CAKE and decaf to finish. A party for 10$ flat!
A TENTH OF THE COST. TEN TIMES AS MANY!
* HAND MINCED or ground chicken (debone two birds, make bones etc into stock)
* 1 large egg
* 1/2 cup finely chopped fresh cilantro or parsley
* 2 scallions, finely chopped
* 2 teaspoons Asian sesame oil
* 1 teaspoon salt
* 1/2 cup cornstarch
* 1/2 cup vegetable oilStir together raw, minced chicken, egg, cilantro, scallions, sesame oil, and salt
with a fork until just blended. (Food processor minces meat, raw.)Spread cornstarch in a shallow baking pan. With wet hands form chicken
mixture into 1-inch balls, transferring them to baking pan as formed.
Wash and dry your hands, then gently roll (dredge) balls in cornstarch until
coated. (Balls will be soft.) Then in whole grain flour or panko type crumbs.Heat 1/4 cup vegetable oil in a 12-inch heavy skillet over moderately
high heat until hot but not smoking, then cook half of balls, turning
over occasionally, until firm and golden (they will flatten slightly), 2
to 3 minutes. Transfer with a slotted spoon to paper towels to drain.
Add remaining 1/4 cup oil to skillet and cook remaining balls in same
manner. Serve meatballs with dipping sauce.Stir together soy and vinegar in a bowl for dipping sauce.

Feeding a few dozen people for CHEAPEST rate, expect them to eat 4 BITES each, you need SIXTY to EIGHTY bites, 8 bucks if a sale chicken at a big market chain with a loss leader. YOU CAN FREEZE extras, cut in two, stuff a brown bag sandwich. It thaws by lunch hour. So Start from scratch as GROUND CHICKEN IS COSTLY.
THE COOKED CHICKEN RECIPE:
Simmer one 5lb chicken until cooked, or buy 5lbs of quarters, simmer, with herbs, onions.Cool, peel off all meat. Give skin & bones to the possum outdoors, late at nite. You won't know that you have one until he comes and takes it. Waste not want not. Good karma.
PICK two birds clean, chop, put that flaked meat in bowl, add soy, vinegar as seasoning, Fry litely, with onions, coriander or parsley minced celery, garlic. Some of your chicken broth, processing into burger. Add chopped blanched almonds, chopped water chestnuts, toasted bread crumbs to your final mix. Dredge and fry as above. You will get a lot of chicken bites. Now your guests can dip into a DIPPING SAUCE.
YELLOW Mix Mayo, Soy, Sesame oil, Dijon Mustard. Honey.
WHITE RANCH DRESSING: mayo, sour cream, onions, dried onions, buttermilk.
RED SWEET AND SOUR: Honey, soy, catsup, sesame oil.
Big bowl bites goes next to the many bowls of DRESSINGS.
COOKS COUNTRY RECIPE: Skinless Breast fillets are made by YOU, (as you can use rest of chicken another day when there's no party, or freeze.) Cut breast into even sized chunks. Marinate in Worchestshire sauce, salt and water. Three egg whites are used on the 'dried' chicken nuggets which you Drained and wiped down with papertoweling. Egg white is best 'sticker' for the dry mix. Now you dredge bites in dry mix of flour, panko and baking soda, salt, pepper, garlic and onion powder. Fry lightly then finish in oven. Mix honey and Dijon for a sauce.
